Commis Chef
Accountable to the Head/Sous Chef and responsible for assisting in all aspects involved in the running of a busy kitchen. You will work in various sections such as pastry, starters, veg etc, as well as preparing the childrens and staff food. Together with the rest of the kitchen team, you would also be responsible for ensuring the compulsary HACCP proceedures are followed correctly at all times.
The kitchen brigade in our Hotel San Lucianu, Corsica consists of 13 chefs, plus a team of kitchen porters. In Ocean Club, Portugal the brigade consists of 5 chefs and kitchen porters providing a TDH menu as well as buffets.
You will provide guests with a full buffet breakfast, buffet style lunch (Corsica only) and 3 course TDH evening meal. In addition you will be catering for children and staff meals during the day.
Requirements
You will ideally be professionally qualified, ideally with experience within an A La Carte environment. This is an excellent opportunity to develop your career therefore you must be willing to learn and develop your skills within the kitchen. Please note the Basic Food Hygeine Certificate is essential.
Kitchen Assistant
Our Kitchen Assistants are responsible for assisting in all aspects of food preparation in the kitchen and helping with the Kitchen Porter duties when required. This will involve ensuring that the kitchen, stores and back of house areas are kept to a high standard of cleanliness in line with hygene regulations, the equipment is clean and stored correctly and provide the necessary support to each section as/when required.
We actively encourage development and progression during each season and there is always opportunity to work your way up through consecutive seasons. Many of our senior Chefs have worked their way up in this way.
Requirements
You will ideally have kitchen experience and the Basic Food Hygiene Certificate is essential.
