Commis Chef
Summer 2008 SEASON - now recruiting!! Positions available in various resorts.
Accountable to the Head Chef and responsible for assisting in all aspects involved in the running of a busy kitchen. You may work in various sections such as pastry, starters, veg etc, aswell as preparing the childrens and staff food. Together with the rest of the kitchen team, you would also be responsible for ensuring the compulsary HACCP proceedures were followed correctly at all times.
The kitchen brigade in our Hotel San Lucianu, Corsica consists of 11 chefs, plus a team of local kitchen porters. In Ocen Club, Portugal the brigade consists of 4 chefs and kitchen porters providing a TDH menu.
San Agostino & Paleros in Greece we require Kids/Staff chefs to work along side a team of local chefs.
You will provide guests with a full buffet breakfast, buffet style lunch and 3 course evening meal. In addition you will be catering for children and staff meals during the day.
Requirements
You will ideally be professionally qualified, with experience within an A La Carte environment. Please note the Basic Food Hygeine Certificate is essential.
Breakfast Chef
Summer 2008 SEASON - now recruiting!! Positions available in our Portugal resort.
Accountable to and responsible for ordering Breakfast items from the Head Chef. You will be in charge of the breakfast shift and staff, to make and prepare the breakfast buffet and staff breakfast. Working mainly mornings only, you will need to help out with the prep in the kitchen and occaisionally in the afternoon and evening with the other kitchen staff.

Kitchen Assistant
Summer 2008 SEASON
Our Kitchen Assistans are accountable to the Commis Chef and responsible for assisting in all aspects of food preparation in the kitchen and helping the KP's when required. This will involve ensuring that the kitchen, stores and back of house areas are kept to a high standard of cleanliness in line with hygene regulations, the equipment is clean and stored correctly and provide the necessary support to each section as/when required.
We actively encourage development and progression during each season and there is always opportunity to work your way up through consecutive seasons. Many of our Head Chefs have worked their way up in this way.
